For Joaquin*, cooking has always been a source of comfort, and a way to feel grounded and creative.
“When I first arrived at Covenant House, I felt really discouraged and unsure of myself. I kept thinking, How did I get here?” He noticed how much he missed preparing his own meals — something that had always helped him feel steady and connected to his identity.
When he heard about the youth cooking workshops offered through Covenant House Toronto’s life skills program, Joaquin joined right away. These workshops help youth build confidence, independence, and community which help build stability in a young person’s life at a critical time.
During one session, Joaquin suggested adding cultural dishes to the workshops, inspired by the diversity of youth staying at Covenant House and the chance for everyone to learn and try new dishes. Life Skills Coordinator Lillian asked if he would like to lead a session. At first, he hesitated. “I was too nervous. I didn’t know if people would feel comfortable with me being in charge. But then I thought… why not?”
For his workshop, Joaquin chose one of his favourite dishes - bolón de verde, a traditional Ecuadorian breakfast made from green plantains, cheese, and optional fillings like pork or chicken.
On the morning of the workshop, youth gathered around and staff came by to cheer him on. “I was nervous seeing everyone, but it was really nice. The staff here are so supportive—they always show up for you.”
As he led the group, Joaquin felt his confidence grow. “I don’t always trust myself, but leading the workshop helped me trust myself more. I realized I could do it. People really enjoyed it, and it’s a dish you can customize however you want. I wanted to choose something everyone can enjoy.”
Today, Joaquin is in culinary college and working toward his dream of becoming a chef and opening a fusion restaurant. He says experiences like leading the workshop helped him believe in himself and in his ability to build a future he’s excited about.
“I’ve grown a lot since coming here,” Joaquin added. “I’ve learned I can handle more than I thought.”
