Each February, staff and youth at Covenant House come together to celebrate Black History Month, by recognizing and celebrating the achievements and contributions of Black Canadians and their communities.
As part of this year’s Black History Month programming, our dedicated life skills coordinators will lead a Caribbean Cooking Class for youth, where participants will prepare a special recipe of jerk chicken with rice and peas.
Our robust life skills program is offered to all youth at Covenant House and plays an important role in helping young people learn skills for greater independence including nutritious meal planning and preparation.
Ingredients (feeds 6-8 people)
Jerk chicken
- 1 kg of chicken
- 2 limes
- 3 tablespoons of dry jerk seasoning
- 4 tablespoons of jerk sauce
- 2 tablespoons of paprika
- 2 tablespoons of all spice
- 1 tablespoon of browning
- Add salt and pepper
Rice and peas
- 1 kg of white rice
- 500g of red peas (red kidney beans)
- 1 can of coconut milk
- 1 tablespoon of salt
- 2 tablespoons of butter
- Tyme and green onion
Method
Jerk chicken
Wash chicken and pat to dry
Combine lime juice with wet and dry ingredients. Marinate chicken, cover and refrigerate for an hour or more
Place in baking in shallow baking dish and bake at 375F° for 45 minutes
Rice and peas
Cook peas with thyme and green onion
Add some of the coconut milk for flavor
Cook for 45 mins or until peas are cooked
Cook rice according to instructions
Combine rice and peas and serve with the chicken
