Stuffed French Toast with Blueberry Sauce Recipe From Our Cooking For Life kitchen

Chef instructor Danny Moon, from our Cooking for Life program, has served up a delicious recipe featuring seasonal blueberries.

Blueberry Sauce

  • 2 cups of blueberries
  • ¼ cup of sugar
  • 1 tbsp of lemon juice


  1. In a medium saucepan combine all ingredients and bring to a boil, reduce to a simmer 8-10 minutes

Stuffed French Toast

  • 2 Slices of bread per person
  • Powdered sugar for garnish

For egg mixture:

  • 3 eggs
  • ¼ cup of milk
  • ¼ tsp of sugar
  • Splash of vanilla extract
  • Pinch of cinnamon
  • Pinch of salt

For stuffing:

  • Mix together a ½ cup of cream cheese and ⅓ cup of condensed milk. You’ll add in a few blueberries per person later.


  1. Whisk together all ingredients for the egg mixture, leaving aside the bread and powdered sugar
  2. Place a frying pan on medium heat
  3. After everything has been incorporated, take one slice of bread and either cut into rounds (or any other shape desired) and generously spread stuffing on one side
  4. Take another slice of bread and do the same
  5. Place a few blueberries on one slice of the spread side
  6. Place the other slice of bread on top (like a sandwich)
  7. With a pair of tongs gentle hold stuffed bread and dunk into egg mixture
  8. Place a ½ tbsp oil and a ½ tsp butter in the heated pan
  9. Gently place egg soaked, stuffed bread into greased pan
  10. Flip after 40 seconds, ensuring that either side of the bread has been browned
  11. Plate, garnish with blueberry sauce and a dusting of powdered sugar
  12. Serve and enjoy!
